And you're welcome.  When I was in Florida a couple of weeks ago I was thumbing through the latest issue of Ticket, Sarasota's weekly entertainment guide.  And I found this ridiculously fabulous cocktail recipe given to the magazine by The Waterfront Restaurant.  It's the Brazilian Pineapple Caipirinha!  And, pardon the pun, this Brazilian will wax ya!  Check out the recipe!!

THE BRAZILIAN PINEAPPLE CAIPIRINHA

2 ounces Cachaca

1 ounce simple syrup

2 lime wedges

2 chunks of pineapple

Caipirinha, by the way, is the national cocktail of Brazil.  So, let's get this party started with a big CHEERS to that.  Okay?  Now, here's how to make the thing!!

Combine the Cachaca and simple syrup in a shaker with ice.  Now, for those of you who are not familiar with Cachaca, here's my quick Alton Brown-like tutorial.  Cachaca is the most popular distilled alcholic beverage in Brazil and it's made from sugarcane juice.  It's like rum and comes in a couple of varieties: white and dark.  Hmmm!  Yes.  It had me at hello too.

Now, that you have combined the Cachaca and simple syrup, muddle the pineapple and squeeze the limes into a glass with ice.  It's very important that you don't strain this.  The chunkier the pineapple, the better.  And just think how tasty those chunks are going to be after they soak up all that delicious Cachaca!!

Now, this fabulous Brazilian Pineapple Caipirinha is ready to be taste-tested.  Or guzzled!  LOL!  Whatever your approach to drinking delicious cocktails . . . just let 'er rip.  You are going to absolutely fall in love with this tropical taste of Brazil.
